Basan Cilla Recipe..

Ingredients for Besan ka Cheela

How to make Besan ka Cheela

Ingredients needed

Check out my detailed post on How to make dosa and dosa batter
Oil for making dosa

Paneer Dosa filling recipe

Paneer /Indian Cottage cheese -200 grams
Onion - 2
Green chilli - 2
Ginger - 1/2 inch piece
Coriander leaves finely chopped -2 tbsp
Oil - 1 tbsp
Salt to taste

Preparation

Grate paneer and keep it aside.

Finely chop onion, ginger and green chillies.

Then add paneer, need salt and coriander leaves. Saute for 2-3 minutes until everything gets blended well and switch off the flame. Now the filling for the dosa is ready.

Since this is a dry filling/sabji, the dosa should not be too thin like masala dosa. It should be thicker than the normal dosa and a little thinner than uthappam.

Now let us see how to make dosa with paneer filling-

Heat a tawa, pour a ladle of dosa batter, spread it in a circular motion.

As it gets cooked, holes start appearing. Drizzle a tsp of oil around the dosa.

Once the sides of the dosa starts to lift up, flip it over to the other side. Let the other side get cooked. After it is cooked, flip again, place 2-3 tbsp of paneer filling and fold the dosa.

Serve hot with sambar or chutney.

   Cumin powder -1 tsp
   Red chili powder -3/4 tsp
Cashew nuts -1 tbsp (finely chopped)
Coriander leaves - 2 tbsp finely chopped
   Cornflour - 3/4 tsp
   Salt as needed
   Cornflour for rolling the koftas
   Oil for frying koftas
  •   Ingredients needed for the sauce
   Oil -1 tbsp
   Onion -1 big
   Ginger-garlic paste -1 tsp
   Tomatoes -3
   Turmeric powder -1/4 tsp
   Cumin powder/jeera powder -1 tsp
   Coriander powder - 2 tsp
Red chilli powder - 3/4 tsp
   Salt as needed

   Dairy Cream -1/4 cup
Cashew nut - 1 tbsp coarsely powdered
Garam masala powder - 1/2 tsp

   For the seasoning

   Oil - 1 tbsp
   Shah jeera/Caraway Seeds -3/4 tsp
Preparation

Boil vegetables or pressure cook vegetables for 2 whistles. I kept beans, carrot and peas in a vessel without water, closed it with a lid and kept potatoes on top and pressure cooked for 2 whistles. In this method there is less moisture in the vegetables. (Don't forget to add water in the pressure cooker).Whichever method you follow, put the vegetables in a muslin cloth and squeeze out all excess water. You can use that water for the gravy later. Drain the water from the potatoes immediately after cooking.

Grate paneer and keep it ready.

Method

In a bowl, mix together grated paneer, mashed potatoes, vegetables, finely chopped green chillies, coriander powder, chili powder, cumin powder, finely chopped coriander leaves, chopped nuts, 3/4 tsp cornflour and salt needed. Mix well.
Divide the mixture equally and make balls.

Roll the balls in cornflour. This is done to absorb any moisture left.

Heat oil and fry the koftas in batches on medium heat until golden brown.

Remove from oil and drain them on a paper towel. Now the koftas are ready. Keep it aside.

Now we will prepare the sauce-

Heat a tbsp of oil, fry chopped onions until golden brown. Add salt to
speed up the process. Saute continuously for even browning.

Add ginger garlic paste and saute for a few more minutes.

Add chopped tomatoes, turmeric powder, red chilli powder, coriander powder, cumin powder and cook until tomatoes become mushy. Do not add water. If it is too dry, add just 1 or 2 tbsp of water. Allow it to cool. Add salt required. (remember we already added salt to the onions)

Once it cools, blend it to a fine paste.

Now heat oil in a kadai again, add shah jeera, when it splutters, add the ground paste and cook for a few minutes.

Add 1 cup of water, cream, cashew nut powder and bring it to boil on low flame.

Add the koftas gently and switch off the flame.(add koftas only at the time of serving)

Sprinkle garam masala and finely chopped coriander leaves.

Serve hot with jeera pulao or chapati or naan.

  4. Grind the urad dal with methi to a fine and fluffy batter.
  5. Grind the rice and poha to a smooth batter.
  6. Mix both the rice and urad dal batter with salt.
  7. Cover and let the batter ferment for 8-9 hours.
Preparing the potato filling-sabzi:
  1. Soak the chana dal in hot water for 30 minutes.

Preparing the Masala Dosa:
  1. Heat a flat pan or a flat non-stick pan. Smear some oil if using an iron pan or griddle. don't smear oil on a non stick pan, as then you won't be able to spread the dosa batter.
  2. Spread the dosa batter in a circular way on the pan. Add some oil on top
  3. Flip and cook the other side. Flip again.
  4. Spread the potato sabzi filling on one side of the dosa.
  5. Cover with the other half and let the dosa cook for 15-30 seconds.
  6. Serve masala dosa hot with coconut chutney and sambar
NOTES :
  • If you are unable to spread the batter on the pan, then add some water to the dosa batter. this will help you in spreading the batter evenly on the pan.
  • To get golden brown dosa, the pan should be hot. But the flip side is that if the pan is very hot, then you cannot spread the dosa batter nicely. Either sprinkle water on the pan and then wipe it. This brings down the temperature of the pan. Do this method on an iron pan. Don't do this on a non stick pan. It might affect the non stick coating.
